Cubed chunks of beef. Usually made from roast cuts, but I've seen them made from sirloin too.

Just sounds like a different flavour profile than the word "burrito" evokes. In terms of meat quality i absolutely believe that. What kind of seasoning/flavour is used?

Idk what the restaurant uses specifically, but I season it with cilantro, lime juice, green chili, fajita seasoning, and black pepper.

You get to choose your seasonings? Cool. I think I just find it hard to square potato with the mexican/texmex flavour profile.
