Dinner 2Nite for Valentines evening at the Gals request - Lamb Chops cut from Rack of Lamb by the best butcher in town - Served with CousCous - Stock was made (simmered while I was in the Garden) Stock turned out Mind Blowing - Some fool the other day said no Flavour Without Fat. Nonsense.Stock was simple - Couple5 Carrots one stalk of Celery - 1/2 Onion - 2/3's of Carrots simmered with just a tad of Chicken Stock and dash of Cinnamon - When the Carrots were on edge of Tender I added the final 1/3 of Carrots along with a Trio of sliced Orange Red Yellow Bell Peppers and simmered until I had cooked and just cooked Carrots and Bell Peppers not so much so cooked -
Did I say the stock for CousCous was AMAZING MIND BLOWING JUST WOW Without a smidgen of Oil - Will add at last minute to CousCous with some super Olive Oil to keep the grains very separate. Veggies that made the stock will be warmed and added to CousCous at very last minute as grain cums out of pot
Bottom line is to serve the LambChops much like they wood be served in Morocco.
For the Grill EggPlant thick slices with Garlic sliced In and of course lots of Olive Oil and when EggPlant is done will do the Lamb Chops to Med Rare on the Rare side - Mushrooms with smigen of Olive Oil for the Grill
Choice of wine will be up to the Girls to pull from the Wine cool thingamagig and be opened and of course French Champagne with assortment of Horderves which they are bringing and have I have no clue what they will be.
Dessert a Chocolate Mousse thing from local French Bakery with berries on Top - I do NOT often bake - Actually almost NEVER - I leave that up to the Pros.
Quick re quick look at web for LambChops with CousCous - Not using the Pomegranate seeds except that is a great idea colour wise. Will have fresh mint from my garden as I have wayyyyy to much mint -
So NO dancing 2Nite as in going Out to dance but for sure well that wood be TMI

Have plans prior to trip to New Orleans for some Seafood Stew or perhaps NOT with so much Shell Fish like Oysters planned for breakfast lunch dinner in New Orleans this coming weekend
