I went to Nobu and got omakase
It was a 7 course meal... 1st course was yellowfin tuna tartare topped with caviar and the base was a miso wasabi like soy sauce thing and then a baby green peach as a palate cleanser... next I had seared ahi tuna with fresh greens served sushi style with daikon used in place as nori. 3rd course was traditional nigiri... toro, salmon, mackerel, fluke, tiny scallops in a little sake cup with rice underneath and then tamago. 4th course was scallops and shiitake mushrooms fried in tempura, 5th course was miso basted sea bass that was really bomb tasted a lot like unagi 6th was filet mingon served hot on a cast iron skillet with asparagus and mushrooms, 7th was just miso soup
For dessert I had green tea ice cream and a chocolate lava cake

One day when I and you have the time. Ask me about my first trip to Haiti and our Voodoo experience. Not significant really. The 2nd trip was with a girlfriend and Voodoo became a huge Issue because of that trip.

NOT likely bad. Dry is ok and as someone said over cooked. Bad will be slimy and not dry. Firm is a good sign. When fish/shellfish starts to rot, it is anything but firm.
Bones in fish - Just eat slowly. Picking out the bones will add energy to the equation and help you keep the weight down while picking out the bones.

Anytime you are concerned about seafood - Just wash-wipe off any sauce and lift a portion and smell it. Ammonia smell means toss it.
Now about dry shrimp from overcooking. Only recently did Cajun and Creole cooking come of age with fish. One Chef made a huge issue of both styles of cooking abusing seafood by overcooking it. They used to add shrimp and Red Fish - Crawfish etc early on and cook the hell out of it in stews Gumbos you name it
Paul Prudhomme yelled loud and clear to all within earshot to KNOCK the overcooking off.
In Jamaica Haiti and other islands near by where they each have their unique form of Creole cooking - They have gotten used to drying fish and later reconstituting it.
This does preserve it so that refrigeration is not necessary - Dried shrimp as with dry mushrooms ends up with a much stronger concentrated flavor.
A jerk that posts here with so called knowledge of food once said Dried peppers are never as good as the Fresh ones. Fact is drying concentrates the flavors. There is a place for Fresh and Dried - Even mixed on occasions.
