Depends on what shorting was used in making of the crust and ingredients.

The Pie filling will be totally ok. At some point it loses moisture and is still edible.

IF the crust was made with butter and the pie was left out for days in a row. Butter at room temperature can get rancid. People for centuries have eaten butter left out for weeks at a time. Rancid is easy to detect with aroma and taste.

With some Vanilla Ice Cream I would eat that pie after warming it up.
