Ok so, the neck has lots of bloood and tissue with lots of flavor, but it is really tough, so mincing it helps that toughness

Nope because I have 1ST Hand experience with Neck Meat - And Huge just LARGE Numbers of people across the USA just the other day had the same experience I had. Pulling the Necks from a bunch of Turkeys and simmering them with celery and Tyme the Herb - Then painfully removing the meat from the bones and when added to the Turkey Gravy that meat was VERY TENDER and Needed not one thought to having to mince it - Comes off the Turkey Neck as Shreds

That said I will NOT ask Google about Beef Necks cause I don't No a single person who has ever dealt with the neck - The full Head YES - Neck NO
