Externally hosted imageWell, actually my second sourdough I guess. The first didn't make it to the oven so I'm not sure it counts. I screwed up the kneading process and it didn't rise so I dumped it.

Today I tried a rustic sourdough recipe with both yeast and sourdough starter. I think it may have been too much leavening because my starter is very healthy and ripe, bubbly, in good shape. They recommend trying a sourdough with a yeast first because it's hard to get the rise. But after kneading it following some youtube video advice, it seemed mine today just rose too much. The bread came out too puffy, a bit chemically in smell, and the bottom browned before the top got any color on it.

Do you agree with my analysis of the situation? Just stay away from the yeast in the future? My starter smells good, not chemically, it's just very active and bubbly.

Ok too puffy with that chemical smell definitely indicates too much yeast and microorganisms. Try it again without yeast. You should not need any yeast. Just double proof it for sure before baking, and let me know how it turns out. I love you.
