Does it work if the winner says it? Like if I win a sumo match with my 280lbs of adipose, do I shout "fair do's!" to the 4'11" 90lb Becky that I pushed out of the sumo ring?

No mate. "Fair do's" is usually said by either the grudgingly respectful losing party or else a dispassionate neutral. Never by the winner.

That makes no sense. Fair do's is passionately shouted by the winner about themselves
