It was part of a backlash against the other gods of the pantheon (such as Baal), they were portrayed as evil beings because they wanted the child sacrifice.
In the OT when they talk about not going to the "high places", that's because the caananite gods lived on the tops of certain mountains and altars were often raised on them

Also the story of the exodus wasn't written until long after the fact, and during the time it was supposed to have happened, YHWH as a monotheistic king of the cosmos wasn't actually a concept.
