Fresh is always better. Fresh food contains chemical compound that degrade over time, exposure to air, etc. The longer the time, and the more processing, between living organism and you eating it, the less and lower quality the flavor overall.

So what is this amazing time-dependent chemical in tomatoes that breaks down if you put them in a can?
Even when I make sauce from fresh tomatoes it tastes better the longer I let it sit and simmer. Even then, the difference is usually just that I've been fussing over the spices and tasting it periodically. It doesn't taste appreciably different than the times I start with canned sauce because I don't feel like chopping/peeling/grating/picking seeds out of 8 lbs. of tomatoes.

Mostly because I am so active. Last weekend dancing for hours after hours after hours in the streets. Dripping with sweat and the very idea I could do that with sunglasses boggles my mind. Besides I need a Gal who is going to stare into my Blue Eyes and with Glasses she will only see her reflection and she will then stress out about her hair being out of order or eye shadow smearing.
Running on the beach which I have cut way back on as I step it up or kick it up or Treadmill - Glasses while running - I guess if I must I will have to find a way to make that work - Goggles? Sure I use reading glasses and have for about one decade but my regular distant vision is still 20/20 but now with Sun Damage

My Ex Wife now passed told me that as a child when her dad as once famous screen/tv writer lost job/work, as result of polio and broke as all fuck and with 5 kids and wife. Family wood go to a restaurant where they got hot water and used packets of ketchup to make tomato soup - Might have been just one or two kids and dad doing this.
I have not tasted ketchup as far as I am aware in many a decade. My MoM was totally against ketchup, because it contains so much sugar.
