A lot of it is made up of pretty vague claims that try to extrapolate results seen in focus groups or small samples of college students to the population at large. It's a lot of vague generalities backed by dubious methodology that presupposes some kind of universal human emotional reaction to color.
That's not to say there's nothing to it. You can certainly make context specific statements about what a narrow selection of people might think about a certain color in a certain situation. But sweeping generalizations about which colors make people calm or angry or hungry are really not accurate or applicable when divorced from any context.

There are actually a lot, but it is pretty depressing. A bunch of stuff has been written about color psychology. Unfortunately, it's mostly by people trying to sell the idea. Google Scholar is a really real thing you can look at and type in 'color psychology' and get results for. Sci-hub is a good source for shit when academic publishing gets in your way.
