They invert what is most precious to God (hence the inverted cross for example). Since children are God's most precious gift (which is why the Catholic Church spends so much time and money protecting them), that is what they seek to corrupt and destroy. Notice that when Satan possesses someone, it is usually either a child or else someone who harms a child.
