Externally hosted imageOne can only hope becky does not settle for a Panera that has barnyard aroma. Design engineers are paid to find solutions to a problem. Hardware engineers often need a part which is not available on the market. Nor is there money in the budget to design and manufacture it yourself. So you buy off the shelf and add circuits to support it. Might even require using three vendors to solve the problem that just one part could solve.

For special dinners I may end up shopping at 3 to 5 markets for the fixings. If I want something fast to eat I may NOT want to settle for the off the shelf item and end up taking it home and spending a few minutes in customization. Not Rocket Science.

Go to your Safeway and find live Seafood in tanks. Then you need a fresh Okra. No way you going to find Okra at Safeway.

So that is Market #2 - Next you want to present to friends a side of lemony desserts which will not overpower the crab flavor, but rather complement it.

That will not be found at Abcd store nearby.

Fresh Basil is not a common item at Safeway in your town -

Caesar Salad is something you cannot really buy and for that you need Ceasar imported from Tijuana Mexico and good luck with that.

If you don't go to five markets per meal for ingredients, I genuinely pity you.

Sure but not very often. Only for a spectacular dinner.
So many farmer markets in this hood nearby. One cannot expect to get really fresh seafood with Whole Foods being a Great Exception and Sprouts will do in a pinch.

Trick is to make sure one smells the Fish - Crustacean close up to nose - One cees Asians actually opening up Fish Gills and stick nose just to top of Gills - I get nose close but NOT touching for sure

IF it smell like the Sea and not like AMMONIA - It's good to go.

I do the same test with my burritos. It's a method Sergio showed me, you sniff the burrito up close to your nose. You often see Mexicans opening up the burrito and sticking their nose on top of the filling.
