I usually use a plate. In fact, I'm using a plate as a burrito cooling pad right now. I keep the --plates-- cooling pads slightly below room temperature in a specially designed --cabinet-- prep chamber in my kitchen.

I know! Your're right. I find the cool ceramic surface a perfect way to cool burritos. The heat conductivity is not so low as to leave all the cooling to ambient air and not so high that it leaves the burritos cold.
