I usually use a plate. In fact, I'm using a plate as a burrito cooling pad right now. I keep the --plates-- cooling pads slightly below room temperature in a specially designed --cabinet-- prep chamber in my kitchen.

Scientific studies have verified that some brands really do reduce temps. Thanks.

I know! Your're right. I find the cool ceramic surface a perfect way to cool burritos. The heat conductivity is not so low as to leave all the cooling to ambient air and not so high that it leaves the burritos cold.

I think that Becky uses one, along with Catherine and Walter.

Have you ever asked your burrista to show you their burrito cooling pad?
