You have to ease them into the ranchjob in slow steps.
Salads are a good place to start. After salads move on to chicken wings. The important thing for first timers is not too flood them with too much ranch stimuli that will cause them to have a bad experience and back out of the process. The end goal is upping the ranch, but you want to do it in slow, pleasurable steps that are welcomed. When they are comfortable and ready, they will ask for more.
