I always interpreted it as people searching for a "reason" to dislike a food, because they think personal preference doesn't suffice. It's okay to not like something, but people feel the need to invent reasons. They're usually inconsistent about it too.

Tomatoes are amazing and I love them.
The one food that people complain about wrt texture that I do understand though I don’t agree with is oysters. I love raw oysters but I get why someone would complain about them. I took a date out once and they gagged on them because they couldn’t handle the texture.

Sometimes they are autists. My mom's friend had an autistic son who couldn't handle food textures. They gave him therapy by putting food in a mesh bag for him to chew

You have probably never had a good home grown tomato - Regular store bought ones are truly nasty compared to the real thing.

Most people I hear complaining about food texture dislike a lack of texture. Things being soggy or mushy bug them. It's usually older people I hear complaining about hard or stringy food but that's usually because of their teeth. (or lack of real teeth)
