What you miss out by not traveling to China is - Like Matt you could stay in bed for a month with treatment from hole in lung TB. After you recover you have to wear a gas/face/mask just to breath the outside air.
The food where Matt lived was as Expats described Inedible Yet the experience of a street vendor dipping a whole chicken in boiling water just for the essence of that chicken which he uses for many days in a row - and then adds the hottest American chiles available - 1 Million times hotter than anything you have tried and only to cover up the fowl taste of that overused Fowl - Vendor does add noodles that are unique because where they are produced, people sleep and drool for hours on those noodles to add human essence.
