Authentic Louisiana style.
This is part of my kitchen. I've got the holy trinity but also adding in Okra and some tomatoes. The meats shall be chicken and sliced pork sausage which I've already prepped.

Good luck! You should really just stick a sad looking wendy's hamburger on a plate and throwing some french fries around haphazardly. It's a lot cheaper and easier.

All vegetables chopped. Now to make the roux but out of tapioca flour since my girlfriend can't eat gluten.

That includes chopping/cooking vegetables and making roux. I mean typically Louisiana style gumbo is slow cooked, after adding everything to the pot, am I wrong?

Tomatoes are totally ok in a Creole gumbo. Many Cajuns have slipped their baby batter into Creole women. That later produced a mix of Cajun-Creoles who do make Gumbo with tomatoes.

So you are telling us that in Cajun country Creoles do not exist. Given Creoles were in Losser~Anna Looooong Before Cajuns - And if you need a history lesson just ask because clearly you have Intelligence issues as well as a poor education -
Tomatoes are traditionally found in Creole gumbo and frequently appear in New Orleans cuisine. Cajun gumbo is generally based on a dark roux and is made with shellfish or fowl. Sausage or ham is often added to gumbos of either variety. After the base is prepared, vegetables are cooked down, and then meat is added.
