Chili rellenos are supposed to be made with long-stem green chili, not poblano peppers. Those are white people rellenos. Thanks.

I suggest you do as I just did. Ask Google
What is the best type of pepper to use for Chili Rellenos?
Results I got are a mix of Anaheim and Pablanos with the front page having more recipes with Pablanos
Thing is the slimmer Anaheim's which my Mom favored are to thin and frankly I think the Pablano is a better tasting pepper and I use one hell of a lot of them weekly

I suggest you do what I did, and live around Mexicans.

LOL
Given I live in San Diego County which if you watch the news of late - Millions here in Calif and many many more Millions are making Trump nervous as they hang out at the Fence just 47 minutes south of me.
I will make one exception to taste - For just a few weeks ever year around August - New Mexico Green Chilis are super super available and are the VERY Best thin like Anaheims - They have tons of taste and come in various degrees of heat and are separated so you have a choice Their skin is thicker and around here the markets have drums that rotate and they will roast them for customers on the spot.

No, I make a couple things with jalapeños I buy fresh, like salsa and a couple sauces. I generally avoid the seeds though. It's relatively recently that I've started using jalapeños though, in the past I avoided them out of unfounded fear. They really aren't that hot.

Pan roasted fresh jalapeños are the very VERY very best. Roasting brings out the sugars and caramelizes them
Makes them sweet and no vinegar acid tang to get in the way

Honest it aint the seeds at all that are hot - The stems that attach the seeds are where the heat is highest
If you pick off the seeds and just put in palm and wash with water - Seeds taste just like a green bell pepper seed

One tried 1/2 of her face with that cream and 1/2 without and after a few weeks we could not detect which side of face had the foreskin - However when we applied are fingers to her face she said one side did make her well... that wood be TMI
