Unless you are planning on using a Seafood stock for the Seafood Gumbo which frankly is not very common - Chicken stock is usually used. The Seafood is added at the very very VERY Last minute - In the old days when cooks in Louisana had no clue about cooking Sea food they wood cook it to death and into mush. Paul Prudhomme layed down the law and everyone agreed and now Seafood is added at the very end.

SO That means the base and all of your work should result in a totally wonderful Gumbo B4 you add the Seafood.

A lot like the Biz you are in - Stage props and actors n script and audio all needs to be in order and the lights are much like the Seafood - Just the Highlites for the production.

So Seafood is an Addition and NOT the Main Attraction Sure does make for a wonderful way to eat Gumbo but only as an Addition.

Not everyone likes Okra - I sure do. My advise on Okra is to save 20-25% or so for the last minute and add for about 4 minutes cooking so it's very green and fresh. No question when cooked down it does thicken the Gumbo and adds a velvety texture.
