I find a good rule of thumb for food safety inspection is asking the question: "Is there something visibly growing on it?" If the answer is no, then you're probably okay.

Probably not. The "yes" section of that flow chart gets really complicated if you try to account for plants and some cheeses.

Sometimes you cut that off, sometimes it's supposed to be there. Cheese presents a complex problem in determining what should be growing on it.
