Not nearby the college unless you count a Mexican restaurant.
We have a few ethnic restaurants up here though. I know of a Vietnamese, perhaps a Japanese restaurant, and an Indian one that I never know if they are open or not.
I haven't visited any of them, but want to check out Indian food. I am just too afraid it will be too spicy.

There are a ton of Mexican restaurants up here that I have eaten at, but how do you classify "real" since I see Mexicans working there and I think I saw some of their higher staff were Mexican, but out of so many variations how do you determine what is quintessential?

No, I want to try it at it's spiciest, but I'm just scared that might end up being my limit. Though I did have beef jerky from the local Farmer's Market that utilized ghost peppers and Carolina reapers which are said to be the hottest pepper in the world right now. So maybe Indian cuisine isn't shit when it comes to spice.

Indian cuisine isn't about heat. Try wiki or Google, Indian cuisine. All kinds of spices which are not hot. A curry might have 15 different spices. Try yelp to find a recommended place. Curry's can run from very mild to very hot. Complex subject goes beyond my writing skills.
Just because Mexicans might work at Taco Bell does not mean the food there represents anything you would find in Mexico.
Just do some basic research to find real mexican food where you live. Sauces made with chocolate and those Moles are very complex sauces.
Small mexican markets usually carry local homemade tamales. Also look for tamales from Central America - They use banana leaves instead of corn husks.

I'm thinking maybe I should just go balls to the wall, but I did remember another reason why I haven't tried it yet. I think this is a reason that outranks the spice one. It's just that I don't know what to order for my first try of the cuisine. Plus there was an Indian restaurant up in Big Bear that had menu names that I just didn't recognize.

Depends on clientiel. If mostly mexicans shop there and they serve fresh food - that will make a huge difference. For instance a small market I frequent has a wide range of mexican dishes and they have nothing that resembles the menu at Taco Bell. Crisp fried taco shells do not exist. Another place I visit serves white beans instead of pinto beans because southern areas of Mexico and Central America favors white beans.

Locate Indian place with help of yelp and tell staff you have never tried an Indian dish and want something that is popular. A basic Chicken curry dish and Indian rice.
Indian breads are unique - some super thin and crisp. Tandoori chicken is terrific and very popular.

lol I did this and it pulled up the local Mediterranean / Middle Eastern restaurant. I remember reading a Yelp review where someone was pissed off that the food was not "halal" and saw the owner purchase meats from a Mexican food market.

Real Tacos are always soft shell tacos. Corn tortillas are quickly heated on a flat grill which may have a lite coating of oil but never fried and always soft.
Mexicans may take old corn tortillas and fry them for chips but that is American influenced. There are Sushi restaurants that employ mexicans. Just a matter of training. There are long arguments about this because they say to make a proper sushi rice takes several years of experience only a Japanese person invests time in but there are exceptions - For instance

You will need to research Sushi - I am still getting work done and to busy to carry on this discussion. One does not have to be Chinese to become a Chinese professional cook. However something as simple as raw fish requires a great deal of skill and I want a Japanese trained Sushi chief because - Sorry just ran out of time to detail why but it's not just about taste it's about food safety when fish is served raw.
