...what would be the ideal time to convert?
I'm assuming you start the year as a Christian, convert to Jew sometime in like July, convert back to Christian in early December
Do I have that right? That gives you the Easter holiday, then the Jewish new year and shit, then back for Christmas. Am I missing other Jewish holidays?

You shouldn't be allowed to convert back during the year. It should be what specific day to convert would get you the most holidays.

If you're allowed to convert back it's too easy. Then why not just convert before every non-Christian holiday and then de-convert for every Christian one?

I think you're right, the more I think about it. I guess I was thinking if like it's a yearly cycle, obviously you'd have to go back.

Why overthink this. No need to convert when with minor exceptions ALL OF US are Free to Celebrate those fun holidays.
Just this last Sat I spent my late morning to early evening at a Greek Church - Food Music Food Music and more Great Greek Food - IF I had attended the Sunday Church service and I have - They not so much so happy if I partake of the Wine with Bread but are most happy to share that Cannibal body of Jesus the Jew Bread and I mean REAL Bread not some horrid cracker.
Conversion is for pussy's - Holidays the fun of a Holiday is part n parcel of having FUN where Fun can be had - No one here wants to be part of a Kosher Yum Kipper after Dinner thing- It is a BARBARIC Sorta affair and how the kids are treated should be made Criminal
