His resume says he attended a cooking school that taught him a few things. Clearly he spent his time in study of anything other than what the school taught. I suspect he did learn that profession wood only allow him to flip burgers at MCD's.

This really is a matter of what is basically wrong with store bought tomatoes. They are grown for shipping and the farmers have breed out all the great tomato taste in favor of shipping characteristics. So a tomato that has most of what you want can only come from a Can UNLESS you have a source of locally grown special tomatoes - Around here people grow them in back yards and have signs to sell them and even a few special markets offer vine grown tomatoes but most of the vine grown just do not have the acid balance one wants -
So in theory a Great Can of Great tomatoes will beat wot one can normally buy in a supermarket
