Vinegar
Vinegar-based sauces are also very popular. Some of the most common are the traditional Louisiana-style hot sauces, which may often have vinegar as the first ingredient. Vinegar based sauces are generally pasteurized.

when combined with the acidity of the vinegar, makes a very shelf-stable sauce. In other words, you can generally leave vinegar-based hot sauces unrefrigerated for long periods of time. Vinegar is used for preservation.

You all who need to be educated can look it up but basics are - Botulism cannot grow in high acid environments. However, tomatoes are in the grey zone, typically having a pH right around 4.5. Because of this, tomatoes need to be acidified or storage promotes botulism which can be deadly.

All bottled sauces with tomatoes require added vinegar.

Most of the popular Mexican picante sauces you can buy contain vinegar too. Some will list it as acetic acid.

Yeah it turns out vinegar is an excellent preservative. That's probably why people have been pickling things for the past 5,000 years to preserve them.
