The mozzarella isn't the nice, high-quality kind you normally get on a caprese salad, but kind of weird and dry. The tomato confit is mushy and oddly spiced. The bread isn't horrible, I guess, but not as good as their panini bread. I ordered it without the white bean puree (because who wants WHITE BEAN PUREE) but I can't imagine that would have improved things.

The frontega chicken panini, broccoli cheddar soup, french onion soup, barbecue chicken salad (NOT ON THE MENU ANYMORE), Greek salad, and some of the breakfast stuff is ok. They have good bakery stuff also.

White bean puree if made with Cannellini beans and seasoned as they do in Tuscany can be a nice addition. You could have just asked for a tiny spoon of to taste.
You are spot on about that Mozzarella which is crappy American based instead of the Italian buffalo's milk type. Cannellini puree is also popular in areas of France.

Guessing you have never tried Cannellini beans and seasoned as they do in Tuscany. They are MOST Terrific on Bruschetta which is a word not even in this dictionary on computer.

Caprese Sandwich
Slice the heirloom tomatoes and the mozzarella into 1/2-inch-thick pieces. Drizzle the baguette with olive oil and red wine vinegar. Layer the tomatoes and mozzarella on the bread, and season with salt and freshly ground pepper. Garnish with basil leaves and sandwich the slices of bread together.

It was fairly bland/weird, but it doesn't have to be that way. With some balsamic, basil, and Italian herbs, you could make a good caprese sandwich.
