The Battle of Puebla was significant, both nationally and internationally, for several reasons. First, although considerably outnumbered, the Mexicans defeated a much-better-equipped French army. "This battle was significant in that the 4,000 Mexican soldiers were greatly outnumbered by the well-equipped French army of 8,000 that had not been defeated for almost 50 years."
Many believe the French were tired of their bland food and needed spice in their life.

As you see from Puebla region the Chile Relleno Stuffed with Meat instead of cheese

I am also always in search of the many variations of Salsas many which do NOT have tomatoes. The variations of DRIED Peppers rather than Fresh because much like how the Asians have discovered that drying Mushrooms concentrates the flavors and provides a different Texture Dried Peppers provide much the fresh cannot - Of course Fresh as with the Pablano are truly wonderful

I never cared about this holiday. I always thought it was utterly retarded for Americans to celebrate a holiday most Mexican people don't even celebrate. Now cultural appropriation gives me a solid excuse to avoid celebrating it.

Time for me to call it a day re net and go out in the real world for fun. These days I can work as many hours for billing as I want to and with 5G this is going to be a terrific ride.
I cannot fit in Mexican anything 2nite Except for a Margarita. What I try to do is celebrate all there is to celebrate - Last Sunday it was a Buddhist festival.
Cajun NEXT Weekend and then comes Greek Festivals with anything I can find inbetween.

As the well-equipped French army marched forward on that fateful day, the brave soldiers of Puebla quickly snapped photos of all the authentic local food they could find. The French had no way of knowing that soon they would buried knee-deep in pictures of tacos, tamales, flautas with salsa, menudo, and endless margarita glasses sparkling with salt. Faced with having to endlessly slog through so many images, the French retreated. The day was won!
