Does this mean they are an inch closer to being legitimate Mexican food in contrast to Taco Bell?

Mexican Chorizo has more grease than just about anything I run into except oil for car.

I wood imagine Taco Bell adds more grease to extend the product

On the other hand when Chorizo is added to any dish one needs lots more napkins so perhaps to keep napkin costs in check Taco Bell may have other thoughts

That's actually a benefit. You fry up the chorizo and then drop a couple of eggs in and the grease allows you to fry the eggs (much like bacon grease does).

Yea seems that is so common among the mex places. Only a few times have I bought the stuff but after one use I toss out the rest.
Tasty but seems eating it to often only gets heart docs a new boat or plane.

Longaniza has less grease and a similar flavor profile, you might try that. Or Spanish chorizo which is much drier than the Mexican version.

Chorizo (Mexican) does make really good tacos if you put it in a tortilla with some pico de gallo and jalapenos and Valentina hot sauce.

Oh yea the Spanish Chorizo is truly great. Longaniza damn its been a long time since I last had any of that. Perhaps locally in paella although I have never asked what kind of sausage they put in that GREAT Dish
