How come a powerful entity like God needs a representative for them on Earth unless that representative was literally themselves? For all we know, prophets such as Jesus, Mohammad, or Moses might have just been the con artists of their day. What sets them apart from other claimants like José Luis de Jesús who not only claimed to be the second coming but also claimed to be the anti-Christ as well?

Why does one have to attend church to have a closer relationship with God when God is omnipresent and therefore should be with you every second of your life? Do you need to visit a building to get closer to someone who is always with you? That seems a little counterproductive. If it's just for the sake of community then that makes sense, but why is this a requirement to forge a better relationship with one's Lord?

God did appear to Moses, and Jesus is God (but also separate from God. it's complicated). As for why, perhaps God is too much for humans to comprehend directly so it's easier to relay messages through prophets and divinely inspire authors to write holy books? Also it might be more relatable for humans to hear it from another human like Mohammed.

Human lifetimes are finite and it's much easier to read a book that says "do X, Y, and Z to be saved" than to try to figure out something humans will never be able to comprehend anyway.

I never knew of anyone who believed that Jesus was both God and a separate entity from God. A lot of Christians do. Again it's complicated. The common analogy is to water. Steam, ice, and liquid water are all H2O but they have different properties. It's the same deal with the trinity: you have the father, the son and the holy spirit. They're all God.
