Update, i prepared this meal again according to the oven based recipe (remove film lid, bake for 45 minutes at 180c).
It was even better than the first one. The mash was nice and fluffy and the fish wasn't as rubbery.

Naw the Parsley should be added AFTER it is cooked of course - Bell Pepper Red preferred wood be best cooked with that Mash and even some added at end for some Crispness
