Becakse they walk the potatoe over to the potatoe prep station and put it in a thigymagig and with one pull slice it. Basket for fryer is beneath it and it goes into its own deep fat fryer. It does not co-mingle with other orders. This is important because there are several options re how crispy or not. You watch them remove the potato's now fried to your custom instructions and salt them again to your specific instructions. There is no single step including the HAND PEELING of the raw potatoe you fail to see (Other than you do not get a deep view of Potatoe's in the deep fat.

Trust me on this - I pay a huge sum of money for editors to clean up my work product prior to submission to clients. If I ever rite anything perfect it's a total mistrake.
