How can you be sure they served you the potato you picked out? They take it to the kitchen and prepare it out of sight. What's to stop them from having one or two good potatoes for show and a bunch of cheap crappy ones to actually cook?

At the In n Out I go2 the kitchen is totally wide open. So you see the raw potato and I suppose I could say bring me another one please. Then the Someelier walks the potato over to the hand press which goes in2 the basket and is then placed in the deep fryer. I order extra crispy and 50% salt.

I've got it: carve your initials on the peel with a knife, then when they serve your fries look at the skins to find your initials.
