Topic: Tonight's dinner: chicken fried steak with cream gravy and poutine.

Meta started this discussion 8 years ago #68,988

The chicken fried steak and french fries are made from scratch. The gravy is from a mix but I added several tablespoons of bacon grease to richen it up.

The poutine is made from home fries, cream gravy and sharp cheddar putting a Southern twist on this traditional Canadian dish.

The gravy in particular turned out AMAZING ?. Adding bacon grease or butter is a simple "hack" that really improves gravies.

I was going to add jalapenos to the poutine but then I realized I ran out of jalapenos so Tabasco will have to suffice.

Served with cheap box wine (you know which one ?). Maybe a glass of eggnog with some brandy for dessert.

All I had was Ryvitas and some chicken slices with cheese and mayo.

That sounds pretty good! We don't have Ryvita here. The closest I've gotten was Wasa brand rye crispbread.

How many thousands of calories is that approximately?

If I had to guess I'd say approximately 2,000.

Did you double deep fry the chips?

No just one trip through the oil. I'm working on a method of making fries. Traditionally you do one of two things: blanch them (briefly boil them to cook the innards) or deep fry first in low temperature oil then fry in high temperature oil. Either way you want to cook the inside of the fry at a low temp and the outside at a high temp to get it crispy and caramelize the sugars in the potato.

My experiment is to cut the raw potato into fries, then microwave the raw fries to cook the inside, then deep fry at 375° to get the outside crispy. This saves a lot of time and effort over the traditional methods. Results so far are adequate, I haven't got it down yet but it's promising so far.

If you serve this to others, remember to show them the potato for a fine dining experience.

You need a potato sommelier, to come out and show the potato before frying.
