The chicken fried steak and french fries are made from scratch. The gravy is from a mix but I added several tablespoons of bacon grease to richen it up.
The poutine is made from home fries, cream gravy and sharp cheddar putting a Southern twist on this traditional Canadian dish.

No just one trip through the oil. I'm working on a method of making fries. Traditionally you do one of two things: blanch them (briefly boil them to cook the innards) or deep fry first in low temperature oil then fry in high temperature oil. Either way you want to cook the inside of the fry at a low temp and the outside at a high temp to get it crispy and caramelize the sugars in the potato.
My experiment is to cut the raw potato into fries, then microwave the raw fries to cook the inside, then deep fry at 375° to get the outside crispy. This saves a lot of time and effort over the traditional methods. Results so far are adequate, I haven't got it down yet but it's promising so far.
