I love 2 Cook but it is rare I cook mexican in the classic cents. Winter is coming so indeed I will do my moms specialty Chile's Rellenos stuffed with the Spanish version {picadillo} without the raisins and nuts. So basics and it's a lot and I mean a lot of work. Filled with ground meat onions and well lots of stuff.

On occasion I will do Pinto beans from scratch and add ham chunks - So my list of Mexican is a very very very small list.

The ONE thing I continue to refine is the Mexican Salas made from dried Chilies.
