If I had to guess, the Chinese people have lived in China for tens of thousands of years and have adapted to the Chinese plants. 99% of Americans are descended from immigrants in the last 300-odd years or so and have not had time to adapt. Compare things like lactose intolerance, vulnerability to alcoholism (completely devastated many native American tribes) and immunity to smallpox.
