British recipe books historically did not bother with the idea of cups. The half-pint, maybe. Regardless, the number of fluid ounces to the gallon is different in the US versus elsewhere due to the US sticking with what was used at the time of the revolution, after which the UK changed from what the gallon for standard usage. The US gallon is more specifically the UK wine gallon.
