Topic: why do vegetarians and veganists try to make their food seem like a Chinese knock off of real food?

Anonymous A started this discussion 8 years ago #66,477

Tofurkey, bacun, sausages from beans or something, gluten free "bread" etc?
Why can't they just eat tofu instead of tofurkey? And tofu instead of bacun? Probably tofu and beans instead of sausages, and birdseed instead of bread, and soy juice instead of milk?

Are they culturally appropriating normal food by taking the names bread, milk, bacon, and turkey? Do vegetarian and veganist clothes have the same weird knock off brands like adidos and dolce&banana?

Vegetarians cannot replicate this.

First: gluten free has nothing to do with veganism or vegetarianism.

I think this perception of "everything they eat is fake" is a matter of marketing. Most of the vegan folk I know are enthusiastic about cooking real food from whole ingredients. The "meat replacement" foods are rare novelties and not actually staple foods.

Additional points:

Sausages from beans — convenient and tasty. They're a nice form factor and breaks up the monotony of crumbled piles of food.

I've never even seen bacun or heard of anybody eating it.

Vegan pastry is a bit disappointing if you've had the real deal and of course meat replacement will not be as satisfying.

Then, you're left with vegetables and gravy. Those are just as good without meat and dairy.

How do you get gravy without meat juices? Soy gravy?

That looks like the "vegan dad" or Isa Chandra recipe for seitan and bean sausages. It's rolled into logs, wrapped in foil, and then steamed. I've made it look even more like fresh turds, before.

They're much more appetizing if fried or grilled (for color) after the original steaming. Slicing them up is also appealing because it'll never have the perfectly browned and greasy look of animal intestine.

They're really good, but not worth pretending they're direct substitutes.

Real food. Beef chicken pork duck. They're really good, and need no substitutions.

Fake chicken and beef stock is good and convincing. My favorite is the Better Than Bouillon brand.

It's pretty simple and I'm not sure how this differs from meaty gravy:

1. Optionally, cook something up and have browned bits ready to deglaze.
2. Prepare some fake meat stock of at least double strength using bouillon and hot water.
3. Make a roux of fat and flour. Coconut or avocado oil is nicely rich and flavorful, while grapeseed or sunflower oils are neutral and heat tolerant.
4. Once the flour is as browned as desired, slowly mix in the stock. This is a great time to add fresh herbs.
5. Once reduced to the desired thickness, serve just like regular meaty gravy.

Cool story, syntax. You do you.

I'm allergic to cows and have shitty genes for handling saturated fats and cholesterol. I decided I didn't want to die a nasty death from congestive heart failure (it's goddamn miserable) and it's hard to get food without cheese or cream so I just went for it.

None of this is about being holier than y'all.

I might have the brand wrong. The packaging at least looks similar to what they sell. I haven't had it in a while.

Cool story, syntax. You do you.

I played competitive sports for 10 years and kept up a great workout routine. I still had high blood pressure and warning levels of cholesterol.

My dad still had high blood pressure and cholesterol while running marathons.

You do you. I'm doing what feels right for me.

Pointing out Hindu's who do not eat meat also have major Cholesterol and Blood pressure problems.

I follow a high fiber and that means the right fibers along with high levels of Niacin and of course Daily Aerobics.

Perhaps I could bring my numbers even closer to perfection BUT without Crab Lobster Shrimp and the terrific meats BUT hey you do what works for you
I have tasted some truly horrid Vegetarian concoctions - City rite next door to me Encinitas is major into health vegy stuff including my Self-Realization Fellowship church neighbor.

Okay there is one fake meat meal that I do regularly make and love to hell and back: boneless tempeh ribs.

Sure, you don't get the exact flavor of pork ribs or the decadent texture of the fat and connective tissues amongst the grain-aligned muscle, but I like them for what they are.

I use multigrain tempeh and marinate in smoked paprika (lots of it), sunflower oil, apple cider vinegar, red pepper sauce, molasses, garlic, and soy sauce. Then I bake it at 375°F, covered, for two hours and finish uncovered for about 20 minutes.
