SOUTHWESTERN MEATLOAF
Recipe serves: 8 | Prep Time 5 min | Cook Time 60 min
Ingredients
1 envelope Lipton® Recipe Secrets® Onion Soup Mix
2 lbs. ground beef
2 cups cornflakes [or bran flakes cereal], crushed (about 3 oz.)
1 1/2 cups frozen whole kernel corn [or drained canned corn]
1 small green bell pepper, chopped
2 eggs
3/4 cup water
1/3 cup ketchup
Directions
1. Preheat oven to 350°. Combine all ingredients in large bowl.
2. Shape into loaf in 13 x 9-inch baking or roasting pan.
3. Bake 1 hour or until done. Let stand 10 minutes before serving.
4. Serve, if desired, with salsa.

It's an American comfort-food meal. No one actually likes anyone else's meatloaf, but we like our own mom's meatloaf, so talking about meatloaf served in an institutional setting is an American joke. A drier hamburger or giant meatball sounds about right. It usually consists of some variant of breadcumbs, ketchup, and spice, along with ground beef. It's sliced and served as the filling to a sandwich or with ketchup as a condiment.
