i like how I can tell that you need badly to sharpen your knives. can't even cut a eggplant skin
also yeah that is not prepared for chopsticks tbh I've never seen an entire half eggplant served like that

Half an eggplant should be served between burger buns with half an onion and a store brand burger meat patty. That's what a classically trained French chef would do.

My good knives are sharp. I often use my crappy knives though, so I will not have to hand-wash the good ones. Also, a skilled chopsticks user can easily eat that whole thing, skin and all.
