Good coffee varies, but here are some flavor profiles:

Burnt dirt, like what many large chains serve

Dark chocolate, vanilla, and toffee

Cherries, honey, and lavender

Citrus, hibiscus, and brown sugar

I like my coffee served black, fairly strong, and from a French press or pour over. Espresso can be nice but it's usually quite bitter. Brewed or percolated coffee seems to be quite acidic and thin.
