Lets say that someone has a talent for cooking, but doesn't know many foods or preperation methods off by heart since nobody ever bothered teaching him how to do anything in the kitchen except turn the microwave on and boil the kettle which means that he had to teach himself everything, including using the oven and hob, so has to consult recipes whilst making something new to him that he doesn't know how to make, rewriting them to be short and a little vague so he is forced to experiment with the preparation instead of just doing what it says to do. However, despite the fact that he looks at a recipe, the final result is almost always good food.
Would you say that the person knows how to cook, or do you think they deserve berating in public when they say that they're alright at cooking because they don't know how to make kateh by rote?
Do you think that the fact that he doesn't know how to make kateh by rote means that this person is "full of shit" and "can't actually cook, then, can you?"
He is adept at cooking many things well, but he simply doesn't know many preparations without having to consult instructions when something is still pretty new to him.

So like I had no other choice but to look up Kateh. Reminded me of the Iranian dish that DOES have that crust on the bottom - Great stuff - and the Chinese make a similar dish and the Crusty rice is more then just better. In fact any huge Asian market sells the Crust as a packaged item.

I have quite a few recipes I have to look at when cooking, because many different measurements and ingredients are many. I could usually wing it of course, but my recipes are fine tuned for maximum awesome. I don't even know what the fuck kateh by rote is, but I'm the best damn cook I know. Fuck em all.
I can't bake for shit, but I'm fine with that and I never learned because I don't eat sweets.

That's like asking whether someone who can play sheet music and cover songs is a good musician. Someone who can follow a recipe and produce food can indeed be considered a good cook, just as someone who plays music others have composed can be considered a good musician. With practice you will commit more recipes to memory and perhaps even create your own.

I already know enough cooking techniques to keep myself afloat. Why do I need to go out and figure out how to do things which I probably won't do, especially because. when it comes to the crunch, I can pick it up with a short demonstration via text/video/images anyway.

General cooking is fairly simple and no cooking classes are needed to become great at it. Specialty cooking (baking, smoking etc) can be quite a bit more difficult and some sort of study would be need to become great.
Next time you see the chick who gave you shit, ask her if she knows a recipe for some super obscure dish, if she does not, tell her to choke on a bag of dicks.
Given the vast amount of info and videos on the net, spending money on cooking classes would be fucking retarded.
