A day where Mexicans all party around 5 big tubs of mayo, in which no whites are allowed due to their sensitivity to spiciness?

It's the day when Mexico gained their independence from Spain. Which is funny because then they ended up fighting against Tejas who desired their own independence.

No it is not that day actually. Look it up: Mexican Independence Day is another day.

It's the day when Mexico celebrates their unlikely victory over France at the Battle of Puebla.

Right. Thus, it is not Mexican Independence Day. And, most people in Mexico do not celebrate May 5.

Because it diverged from the original meaning and the new meaning of the holiday from the U.S. overlapped the old meaning?

No, but rather because that particular battle is not a huge deal in modern Mexican culture. It's sort of like how no one in the US makes a big deal of winning some battle against Canada 200 years ago.
