Ingredients
Since the time of Cato, basic pasta dough has been made mostly of wheat flour or semolina, with durum wheat used predominantly in the South of Italy and soft wheat in the North. Regionally other grains have been used, including those from barley, buckwheat, Mung Beans, rye, rice, and maize, as well as potatoes, chestnut and chickpea flours.
Some recipes use rice or maize for making pasta. Grain flours may also be supplemented with cooked potatoes.

It's not pasta, it's potatoes.

@777,326 (Syntax)
For once, I agree with Syntax and not Indy. Gnocchi is pasta.

Vodka made from potatoes - Pasta made from potatoes
In the beginning they made Vodka from potatoes and over time most switched to wheat.
I love the Mung Bean noodles that one often finds in Sukiyaki however in many areas of Japan n USA they use Yam noodles. The very best are
"Shirataki noodles (aka miracle noodles, aka konjak noodles, aka konnyaku noodles) is an ingredient popular in Asian cuisine. It's made from konjak plant which is ground and them shaped into noodles"
