I like starting it in a hot oven and turning the temp down when I put it in. I also cut around the lower leg bone up to the knee joint to stop the meat stretching. The same type of thing as cutting the tendon on a lamb shank.

I like using a splash of balsamic vinegar. I rub the leg with oil, salt and pepper, and then some balsamic. The skin turns out grate

Update: I roasted it with garlic, black pepper, and Creole seasoning with a bit of wine in the roasting pan. Medium rare. It's delicious!
