It's a dumpling, not a potato. It's like saying "coffee is water" because it's 99% water. That extra 1% makes all the difference.

Gnocchi is not literally "only potatoes", but it is certainly not pasta. The equivalent, according to your analogy, would be that coffee, while not "only water", is not beans.

The beans is what makes it coffee. Water is just the canvas on which coffee is painted. It's like going to the museum and saying "It's not Rembrandt, it's canvas". You'd sound like a total dumbshit hillbilly to anyone who actually knew about art.
