Both are etymology correct as the root word for ketchup/catsup is kaets; which is old saxon/german for the product of vegetable puree.

Though i do sometimes wonder if kaets can be traced further back, but i find no evidence to indicate as such.

"Catsup" reminds me of cats puking furballs on the carpet, so "ketchup" is preferable.
