when making hard boiled eggs a good method for making them very easy to peel is to drop them into a bowl of ice water after you're finished cooking them. cooling them down quickly pulls the egg away from the shell thus making them much easier to peel. another method would be to gently crack the egg right at the narrowest part. you don't want to break "the skin" under the egg, but give it just enough of a tap to "dent" the tip. supposedly steam (?) gets through and helps to separate the egg from the shell. i think that's bullshit, but it does seem to work to make the egg very easy to peel.
