Mustard is the superior condiment for hot dogs and brats, with Fries than I prefer Buttermilk ranch to Ketchup, but I will occasionally have Ketchup with fries.

Mustard is definitely spicy, I'm not 100% sure of the molecular specifics of Ranch dressing and other dairy based products, but I do think that Ranch and other milk based products bind to Capsian molecules, preventing them from binding to pain receptors in the tongue, decreasing the sensation of heat that occurs, and the spiciness of the food.
