OP Potatoes have a natural sprout that is very much like a pasta noodle. Best if you choose another noodle looking item instead. Stick with Gnocchi.
If improperly made they can be used as lead weights for fishing.

All real, professional Italian chefs agree that gnocchi is not pasta, even in a purely culinary sense.
