GRILLED DOLPHIN
1 1/4 lb. thickly sliced dolphin
8 cloves fresh garlic, minced
1/2 c. olive oil
1/2 tsp. paprika
1/2 c. rice vinegar
Salt if desired
1/2 tsp. pepper, black lg. ground
Dinner for 4. Cut off any dark meat on dolphin. Marinate 4 even slices of dolphin in large bowl. All ingredients mixed for at least 6 hours. Grill 5-7 minutes on each side depending on thickness. Approximately 10 minutes total for 1 inch fillets. Baste with marinade mix while grilling.

DOLPHIN L'ORANGE
2 lbs. Dolphin filets
1 c. vinegar
1 c. sugar
1 tbsp. orange extract
2 sliced oranges
Place vinegar and sugar in saucepan. Boil until mix just starts to thicken. Add orange extract. Remove from heat. Place 1 layer orange slices on bottom of baking dish. Dip filets in thickened sauce and place 1 layer in baking dish. Pour on excess sauce and cover with remaining citrus slices. Bake in 350 degree preheated oven for 10 minutes per inch of filet thickness and serve.

MAHI MAHI
2 lbs. Dolphin, skinned and cleaned of dark parts
6 oz. butter
Salt and pepper to taste
1 whole egg, beaten slightly
1/4 c. heavy cream
3 tbsp. sesame seeds, mixed well together with 2 tbsp. flour
Light Supreme Sauce (recipe below)
Prepare two bowls or dipping trays, one with the beaten egg and cream, the other with flour and sesame seeds combined.
Portion fillets of fish into approximately 5 ounce servings. Season with salt and pepper and dust lightly with flour. Dip into egg and cream mixture, then into flour and sesame seed mixture. In the meantime, heat saute pan with butter; place fish fillets and brown golden on both sides and remove from pan (keep warm).
Light Supreme Sauce:
Melt 2 tablespoons butter. Stir in 1 tablespoon flour to make a smooth roux. Slowly add 1 cup of chicken broth; blend smoothly. Let simmer 10 minutes and add heavy cream. Add salt and pepper. Serve 3 tablespoons of sauce on a plate and place crisp browned fish on top. Serve.

The best way to eat dolphin (assuming you mean the mammal), is to eat it Japanese-style, meaning raw or only lightly steamed, with some very high-quality soy sauce drizzled on, and maybe a psrinkle of minced chives. The fatty mammal meat, while an acquired taste, is delicate and delicious.

I like dolphins. I don't see why anyone would eat dolphins. Dolphins are like humans except they live in water. I wish I had a dolphin but my mother would never let me have a dolphin even though they are cool.
