diced high fat bacon and put in the pan. fry on low until all the fat has melted out.
chop an onion, a carrot, and a celery stalk. add to pan and fry on medium until soft.
add half a kilo of minced meat (usually beef or 50/50 beef and pork). break it up and fry on medium high until brown.
add a few tablespoons of tomato paste and half a cup of dry red wine. stir until it sort of absorbs.
get 1 cup of full cream milk. leave over low heat over the next 2 hours stirring occasionally. add a little bit of the milk each time you stir.
Season with salt and pepper.
Serve with egg pasta and parmesan.
